Vegan French Onion Dip

Ingredients

  • 1 ½ white onions, diced

  • 1 T oil

  • ½ T veggie broth

  • 1 ⅓ cup cashews

  • ⅔ cup dairy-free yogurt unsweetened, unflavored

  • ¼ cup water

  • 4 T apple cider vinegar

  • 1 t salt

  • ¾ t onion powder

  • ½ t garlic powder

  • Chips or veggies, for serving

Directions

  1. Heat oil in a pan over medium heat. Add diced onions and stir to coat. Let caramelize for 30-40 minutes, until browned and soft, stirring occasionally so they don’t burn. Deglaze pan with broth and stir to combine for added flavor. Let cook down for another 5 minutes. Turn heat off and let them sit until ready for use. 

  2. In a high-power blender, combine cashews, yogurt, vinegar, seasonings, and about ⅔ of the caramelized onions. Blend until smooth and creamy, adding water as needed to thin. If you don’t have a high-power blender, soak the cashews in water overnight or boil them for about 15 minutes until softened.

  3. In a serving bowl, add the rest of the caramelized onions, reserving a few for garnish, and the blended base. Stir to incorporate onions into the dip.

  4. Chill before serving and top with the reserved caramelized onions and parsley, if desired. Serve with potato chips or veggies.
