Pumpkin Pie Chia Pudding

Ingredients
For Pudding:
1 cup dairy free milk
1 cup pumpkin puree
⅓ c non dairy vanilla yogurt
3-4 T maple syrup, depending on sweetness preference
1 t cinnamon
⅓ c chia seeds
For Crumble:
1 cup dates
1 cup walnuts or pecans, or a mix
Sprinkle of cinnamon
Dash of salt
Directions
For the pudding, combine everything except the chia seeds until incorporated. Then, add chia seeds. Let sit for 10 minutes and stir again. Then store in the fridge.
For the crumble, pulse ingredients in a blender until crumble consistency is reached. Do not over blend.
Once the pudding is set for at least 2 hours or overnight, layer with yogurt, crumble, and top with more nuts.
