Kiwi Chia Pudding

Kicking March off with a bit of green! I’m enjoying the fruits in season such as citrus and kiwis. This simple chia pudding provides a healthy dose of Vitamin C and a subtle fruity flavor. I would also recommend shredded coconut as a topping to garnish and layer with. Prep ahead of time and enjoy this as a quick, refreshing breakfast.

Ingredients

  • 1 cup dairy free milk

  • 1 cup dairy free yogurt

  • 2 T maple syrup

  • ½ c chia seeds

  • 3 kiwis, quartered, plus 4-5 kiwis, sliced for garnish

Directions

  1. Peel kiwis. 

  2. Blend milk, yogurt, maple syrup, chia seeds, and quartered kiwis until smooth. 

  3. Refrigerate pudding for at least 2 hours or overnight. 

  4. Line jar or glass with sliced kiwi and layer, if desired.
