Kale & Gnocchi Soup

Ingredients

  • 2 T olive oil

  • ½  medium onion, diced

  • 4 cloves garlic, minced

  • 2 T vegan butter

  • 2 T flour

  • 2 t fresh thyme (dried is fine, just add a bit less!)

  • 1 t salt

  • ½  t pepper

  • ½ t oregano, dried

  • ½ t basil, dried

  • ¼ red pepper flakes

  • 1 can coconut milk

  • 4 cups vegetable broth

  • 1 16 oz package potato gnocchi

  • ½ cup sun-dried tomatoes, finely chopped

  • 4 cups kale, finely chopped 

  • Lemon wedges, to garnish

Directions

  1. Dice onion, mince garlic, and finely chop both kale and sundried tomatoes.

  2. In a large pot over medium to high heat, combine olive oil and onion. Cook until fragrant, about 3-4 minutes. Add in garlic and stir to combine. Cook for another 2-3 minutes. 

  3. Lower the heat a bit and stir in vegan butter and flour. Add in spices and stir to combine until vegetables are coated, about 1 minute. Add broth.

  4. Add in gnocchi and let simmer for 5-7 minutes. 

  5. Add coconut milk, kale, and sundried tomatoes. Cook for another 5-10 minutes covered on low heat.

  6. Taste and adjust seasonings. 

  7. Serve with a squeeze of fresh lemon.
