Kale & Gnocchi Soup

Ingredients
2 T olive oil
½ medium onion, diced
4 cloves garlic, minced
2 T vegan butter
2 T flour
2 t fresh thyme (dried is fine, just add a bit less!)
1 t salt
½ t pepper
½ t oregano, dried
½ t basil, dried
¼ red pepper flakes
1 can coconut milk
4 cups vegetable broth
1 16 oz package potato gnocchi
½ cup sun-dried tomatoes, finely chopped
4 cups kale, finely chopped
Lemon wedges, to garnish
Directions
Dice onion, mince garlic, and finely chop both kale and sundried tomatoes.
In a large pot over medium to high heat, combine olive oil and onion. Cook until fragrant, about 3-4 minutes. Add in garlic and stir to combine. Cook for another 2-3 minutes.
Lower the heat a bit and stir in vegan butter and flour. Add in spices and stir to combine until vegetables are coated, about 1 minute. Add broth.
Add in gnocchi and let simmer for 5-7 minutes.
Add coconut milk, kale, and sundried tomatoes. Cook for another 5-10 minutes covered on low heat.
Taste and adjust seasonings.
Serve with a squeeze of fresh lemon.
