Chocolate Covered Stuffed Dates

Still need a date for Valentine’s Day? These dates are stuffed with a homemade strawberry and cherry jam and coated in a rich chocolate shell. They taste indulgent but are quite nutritious for the body and soul. This dessert or snack comes together quickly and just needs some time to set in the freezer. Happy Valentine’s Day!

Ingredients

  • 12-14 pitted dates

  • 1 cup strawberries, roughly chopped

  • ½ cup fresh or frozen cherries 

  • 2 t apple cider vinegar

  • 2 t maple syrup

  • ⅔ cup dairy-free chocolate chips

  • 1 T coconut oil

Directions

  1. Combine strawberries, cherries, vinegar, and maple syrup in a small stockpot over medium heat. Mash the fruit down as it cooks down. 

  2. Bring mixture to a boil, stirring occasionally, for 25-30 minutes, or until liquid is cooked out and you’ve reached a jammy consistency. Lower heat throughout if necessary to ensure the liquid cooks out and doesn’t burn. Take off heat and let cool in a bowl until step 4.

  3. Melt chocolate chips and coconut oil in the microwave for 15-second intervals, stirring each time, until chips are completely melted. 

  4. Stuff each date with a bit of jam. Using a fork, toss in the chocolate mixture until coated. 

  5. Sprinkle with sea salt and let set in the freezer for 1-2 hours.

  6. Once the chocolate is hardened, enjoy! Store in the fridge or freezer.
